Dubai has another famous Italian arrival. This one brings enormous rectangular pizzas, scissors and very little reason to stop at one slice.

Bonci is now open inside Chef’s Society at City Centre Mirdif, marking Roman pizzaiolo Gabriele Bonci’s first Middle East restaurant.

The main event is pizza al taglio. Pick from the trays, choose your size and watch it cut with scissors, then pay by weight.

A small piece of potato pizza? Sensible. A large section covered in several cheeses and no forward planning? Better.

How Does It Work?

Take a number, inspect the trays and point to what you want. The team cuts each piece with scissors, weighs it and works out the price.

No full-pizza commitment required. Order several smaller slices, try more toppings and stop when common sense or table space intervenes.

Bonci is known for an airy, slow-fermented base with a crisp exterior and seasonal toppings. The format began at Pizzarium in Rome and has travelled internationally, but the cut-and-weigh ritual remains the main event.

“The correct number of slices is however many let you try another topping.”

Not Just a Pizza Counter

Dubai’s Bonci is a bigger, sit-down version of the Roman original.

The counter keeps the classic cut-and-weigh format for dine-in or takeaway, while restaurant guests can order pizza made to size. There is also fresh pasta, salads, Italian mains, breakfast and dessert.

So yes, you can grab one slice after shopping. You can also bring the family for lunch or stay for a full pasta situation.

Who Is Gabriele Bonci?

Gabriele Bonci is one of Italy’s best-known modern pizzaioli, famous for treating pizza dough with the seriousness usually reserved for much fussier restaurant dishes.

The name may be famous, but the appeal is gloriously simple. Look at the counter. Point at the pizza. Choose your size. Watch the scissors get involved.

Bonci sits inside the new Chef’s Society dining hub alongside Bait Maryam, REIF Japanese Kushiyaki and Anara.
