Come for the flames, stay for the food. Ross Shonhan’s Japanese restaurant at Emirates Palace uses warayaki, a quick blast of burning straw, to give seafood, beef and vegetables a smoky edge. The open kitchen delivers the theatre, but the prawn toast, miso-glazed Chilean sea bass and spaghetti mentaiko give you good reason to pay attention to the plate. Expect a DJ soundtrack and a serious cocktail list, not a hushed tasting-menu room.
