Fusion Ceviche is the kind of place that makes a tiny room work in its favour. Chef Penelope Diaz serves bright, punchy Peruvian plates from a compact JLT spot where the ceviche arrives sharp, cold and properly alive with citrus. Start with the classic ceviche, add something from the tiradito side of the menu, then order one warm dish for the table. This is not polished hotel dining, and that is exactly the point: it is personal, generous and very easy to recommend.
