SUSHISAMBA has company in the kitchen next Wednesday. Gabriela Chamorro of Girl & The Goose joins Kyung Soo Moon on 21 October for Fuego, bringing Nicaraguan and wider Mesoamerican flavours to the restaurant’s Japanese, Brazilian and Peruvian cooking.
There’s plenty going on, but no fixed tasting menu to commit to. It’s à la carte, so you decide what lands on the table.

The announced dishes are:
- Yellowtail aguachile ceviche: AED 99
- A5 Wagyu tataki: AED 129
- Grilled sweet prawns: AED 169
- Miso black cod: AED 175
- Caribbean coconut flan: AED 51
We’d start with the yellowtail and finish with the flan. The middle is a conversation between you, your appetite and whoever keeps pointing at the Wagyu.
Ordering all five would total AED 623 before drinks or extras. That’s the arithmetic, not a package price or a recommendation to treat dinner as a checklist.

Come for what these two chefs have cooked up together. Your regular SUSHISAMBA order can survive one evening without you.
The setting, 51 floors above Palm Jumeirah, hardly hurts. But Fuego is the reason to book this particular Wednesday.
Check your slot before reserving: the restaurant normally serves dinner from 6pm, but Fuego’s start time hasn’t been confirmed. Ask when the collaboration menu will be available, rather than assuming every dinner booking gets it.
