Sea Fu at Four Seasons Resort Dubai has reopened. The beach is back in business, and so is the sushi counter.

The Asian seafood restaurant returned on 15 September with new dishes and a fresh face in the kitchen. The menu moves from sushi and sashimi to dim sum, wok cooking and grilled seafood.

Sea Fu is open Tuesday to Sunday from 12.30pm to 7pm, with last food orders at 6.30pm. Book the long lunch or early dinner.

The separate Sea Fu Bar stays open later from Friday to Sunday, but the restaurant itself will not entertain your 8pm sushi ambitions.

What’s New?

Start with the seven-piece nigiri chef’s selection. Each piece gets its own topping, so there is no need to drown everything in the soy sauce dish and hope for the best.

The new menu also brings grilled Japanese madai with sea fennel and sauce vierge. Yaki soba arrives with house sauce and homemade furikake.

Elsewhere, the mixed dim sum selection covers vegetables, corn-fed chicken, sustainable prawns, seafood and A5 Wagyu beef. Grilled Hokkaido scallops come with trout caviar, leeks and kimchi sauce. The grilled octopus gets potato terrine, ssamjang emulsion and bulgogi sauce.

If lunch needs to become more serious, order the Mediterranean sea bass fillet with locally grown maitake mushrooms, green asparagus, lemongrass sauce and plankton olive oil.

So yes, you can come for sushi by the water. Just do not stop reading the menu there.

“The restaurant closes at 7pm. Plan around the daylight instead of trying to force it into an 8pm dinner.”

Who’s Cooking?

Chef de Cuisine Marcel Finsterer-Graf von Bassewitz continues to lead Sea Fu.

His CV includes two-Michelin-starred Tristan in Mallorca, Zuma, Nobu, Cheval Blanc Randheli and Sexy Fish London. In other words, he knows his way around a high-expectation dining room.

He is now joined by Junior Sous Chef Okta Haryanto, who arrives from Four Seasons Vietnam. Haryanto previously worked at Nayuu, the hotel group’s omakase restaurant, bringing specialist Japanese experience into the kitchen.

The sea view was never the issue. The new menu now has to give diners enough reason to look away from it.

The nigiri selection, grilled madai and Haryanto’s omakase background make a decent case on paper. The eating will decide the rest.

Who Should Book It?

Sea Fu works for long lunches, polished date days and visiting-family meals where Dubai is expected to provide water, sunshine and seafood in one booking.
